I’ve tried to Google an answer but it’s mostly drowned out by the sea of woo that makes out lecithin to be a miracle drug.
I’m going to make some (food) foams using lecithin as an emulsifier. All the recipes that I see say to use “soy lecithin” but I wasn’t paying attention and bought lecithin made from sunflowers. I assume it’s largely the same thing but does anybody know?
