Chantilly Cake

My cafe has recieved a request to make a cake called Chantilly cake. I’ve googled it and found that, depending on region, it can take a number of different forms and flavors.

Being as it’s for a club called The Lincoln Club, and they have usually had a cake recipe that came from Mary Todd, for which I do have a good recipe, I’ll make that again. But maybe I should call the contact number just to be sure. Do you think this is the best course?

Yes, absolutely call (or better, email) the customer and tell them you have a number of different recipes for their cake and just want to make sure everyone is on the same page. They won’t think anything of you doing that, but you run the risk of getting bad mouthed if you make the wrong one.

And, if they like the back and forth with you and seem like friendly people, calling to clarify something like this will get you a few brownie points.

I suspect you know that’s the right answer, but we all know that regardless of whether or not something is your fault or the customer’s, they’re going to blame you (hence the email).

Yes, I would call/email/contact the client to double check. Nothing can be lost by doing so, and a lot of trouble can be saved.

I was told by my kitchen manager to do the Todd cake, since we have done it before. She gets kind of upset if folks second guess her.

Do you need to tell her? If needed, “you ran into” or “she clarified”.
Otherwise, I suppose it’s her café, and her reputation. :shrugs:
