On ramen, from the poor days:
Don’t even bother cooking it. Most real ramen brands (not Campbell’s!) are good to eat “raw”. The noodles are crispy, kinda like a cracker consistency.
If you do cook it, the best way I’ve found is to boil the water, take it off the stove, drop the noodles in and let it sit for 2 minutes. The noodles have more of a firm texture this way. Chop up a bit of broccoli into the water when you put the noodles in, and you’re good to go.
