Small chicken bones are a choke hazard. I would never serve gumbo without removing them.

I disagree with this thinking.
If you leave the bones in, it lets the eaters know that “hey, this has bones in it!”
If you debone it yourself, especially after cooking, there’s a chance you might miss a small one. Meanwhile, you’re guests are eating it with confidence that there are no bones in it. Which could end very badly for them if not otherwise informed.
People in Baton Rouge wait for me to make chicken and sausage gumbo for them when I go back for visits, and there are no bones in my gumbo.
