Chorizo + Banana Peppers = ?

I have a pound of ground chorizo and four beautiful banana peppers. I’m thinking of halving the peppers, stuffing them, then baking them in a tomato sauce.

But specifics? With bell peppers and ground beef I’d make my stuffing with some ricotta, breadcrumbs, egg, etc.

Ideas?

My first thought is that chorizo is much, much greasier than ground beef.

You’ll need something to counter that grease, so I would go with something like red rice as a component of the stuffing.

Throw a big handful of queso on top at some point during the baking process, make it a bastard version of chiles rellenos.

Mmmmmmmm. Like the chiles rellenos idea.

Turned out very, very good. I diced some tomatoes from the garden and simmered them in enchilada sauce. Stuffed the peppers with chorizo/cheeses mixture and baked. Served with Mexican rice and guacamole.
