Those seem at odds; on the one hand, bringing out the flavor of tuna, on the other, hiding it.
In the rural Southern United States, tuna is an inexpensive food that people go to great lengths to hide the taste of.

Tuna in oil is good for when your cat is sick and won’t eat–they’ll drag themselves out of a shallow grave for tuna in oil.
For healthy humans it’s all about tuna in water. I have spoken! 
Back when I was young, tuna only came in oil. You opened the can, plopped the tuna out into the strainer and ran some water over it, then squished it down with fork to get the water out. Then you made tuna salad.
Then tuna started to be packed in water. If you didn’t rinse it off, it tasted nasty. If you did rinse it off, it tasted blah. So it was back to tuna in oil, despite the possibilty of extra calories from the oil.
Then we heard stories that tuna in oil that you rinsed was better for you because something (can’t remember what it was) bad got leached out of the tuna by the oil, so it ended up being healthier-safer-less fattening than tuna in water.
For me, it all comes down to flavor, and I prefer the flavor of oil-packed tuna that has the excess oil rinsed off.
That means they have the wrong kind of tuna. I buy canned tuna at the farmers’ market–the vendors can vary, but these folks are one example–and it’s great. The oil makes the fish richer and moister, and I’ll happily eat the tuna straight out of the can.
Granted, it’s a lot more expensive than the cheap stuff at the store, but I figure I’d rather avoid tuna that smells like cat food.
As an aside, you who still buy tuna in the can should try the fairly new tuna in the sealed bag thing.
Seems to have more flavor, doesn’t have to be drained and keeps a bit longer.
Around here, the prices aren’t much different either.

I like it because I can give myself the tuna water. I sip the bulk of it out before I squeeze the rest out and wash it down the drain.
No tuna is allowed in my house during the summer though. I can’t get the smell out of the kitchen when it’s hot.

First time we got tuna packed in water, it tasted so bad that we thought someone mislabled cat food. Took me a long time to try it again and when I finally did the taste had vastly improved. I wonder what they did different.
