Archaeologists spend a lot of time studying soil samples, and trying to figure out what people ate, cultivated, etc…They track seeds, food residues, pollens found in archaeological material and so on. And ancient Egypt is particularly well studied.

If coca had been cultivated in ancient Egypt, we would know. And in fact, it’s highly likely that it would still be cultivated, if it were the case.

No, but many of the people who actually pressured them into going after Galileo were (inasmuch as anyone from those times can rightly be called a scientist). All the signs are that, left to its own devices, the inquisition would have had little or no inclination to go after him. However, they, and more importantly their boss the pope (who, given his druthers, might well have appointed Galileo official papal philosopher) were under heavy political pressure from university professors who were used to teaching geocentrism and the Aristotelian physics that went with it.
