Cookbook recommendations for a special diet

My brother-in-law is young (44) but had a major stroke a few months ago that require him to take blood thinners. This does away with leafy vegetables (salads, spinach, greens, etc.).

At the same time he suffers from gout and high blood-pressure and is advised to eat as little meat as possible to avoid irritating either.

Since most vegetarian cookbooks rely heavily on leafy vegetables, it’s difficult to find recipes for him. Can anybody recommend any books that might be of use?

You might want to give Vegetarian Cooking for Everyone by Deborah Madison a try. It’s a HUGE book (1,400 recipes), and it has all kinds of different recipes using the whole spectrum of the vegetable world. It’s one of my favorite cookbooks, actually.
