Cookery book recommendations...

Can anyone recommend a good book (or two) on baking, cake making in particular.

I would prefer something that has recipes by weight rather than volume (or both), if possible.

As a baker by profession I have a number of books on cakes. However, most of them are measured, not weighed. There’s a German book, German Baking Today, that’s good. It’s produced by the Oetker company, sort of like Betty Crocker in this country.

If you go to www.allrecipes.com, and select recipes there, you have the option of having the listed ingredients changed to metric measurements, which gives ingredients by weight.

If you would like me to recommentd a couple of the measured ingredient books I have, I will.

A classic (ie 20 years old) book is Delia Smith’s Book of Cakes. She weighs everything.
