After the the troubles of the board and the reduction of the database one of my favorite threads seems to have disappeared for good.
What are your favorite cooking for one recipes? Or cooking a good meal (with meat) on a little bit of money. I have a small repetoire of recipes and would like to expand it. From what I recall most of the stuff posted here was quite good.
My recipe is meatloaf. Needs one pound of ground beef and a pound of ground pork. Breadcrumbs, frozen chopped spinach, two eggs and two cans of small peeled potatoes. Mix the meat together. Mix in the spinach and then the eggs. Add a handful of breadcrumbs, mix thoroughly. Add small peeled white potatoes around the meatloaf in the pan and bake for an hour at 450.
I make this Hamburger Helper-like concoction. Cook 1 lb. ground meat. Make 1 box of Rice-a-Roni according to package directions. When the meat is cooked and the rice is not quite done, throw in the meat and a box of frozen or canned veggies. Finish cooking the rice with the meat and veggies. Enough food for Patton’s Third Army and it’s good for lunch the next day.

Take equal amounts of olive oil and butter (3-4 tbsp each) and heat them over low heat in a saucepan till simmering. Add some chopped garlic, (red pepper flakes if you like) and saute. (I sometimes also add pine nuts). Then add basil oregano and parsley to taste (fresh preferrably). Add salt and pepper to taste.
Then add in your serving size of cooked pasta and toss to coat.
Sprinkle on some parm cheese and toss to coat.
I usually serve up on a plate, top with crumbled feta, and you can serve with most any meat (for a fast dinner night i use frozen buffalo strips… chicken seasoned with buffalo wing sauce. The frozen chicken cooks in the amount of time needed to complete the dish).
Total cooking time - under 20 minutes.
Also makes a good fast meal for more tham one. just increase the amounts.
