Our local supermarket had veal on special - $2.49/kg, only catch was you had to buy 8kg of veal to get it at the special low price. So I got my 8kg of veal but after almost a month of eating veal I’m running out of cooking ideas.
So far I’ve fried, BBQ’d, stir fried, stewed and roasted the veal.
I’ve got several different cuts of veal left still, including ribs, chops (well that’s what they look like), shins and large lumpish bits. Probably about 4 kg of veal left.
Today I am marinating some of the ribs in a mixture of coconut milk, chilli and ginger. I have no idea how I am going to cook it, just liked the mixture of ingredients.
Or braised veal shank (Osso Bucco). Mario Batali (Molto Mario on the Food Network) has a great recipe for it, but with braising almost anything goes and tastes good.
Mix up a bit of breading and cook them (this would probably work with both your chops and shins) in a bit of olive oil. Add your favorite red sauce–I like lots of veggies in mine–and serve on top of pasta with mozzarella cheese.
Do it up anyway that you would do pork or chicken and you can’t go wrong. Undercook it a hair and you’ll be set.
When I was in the service, there was a period where the government must have had a serious special on veal. I ate veal 2 and sometimes 3 times a day for several months. It was years before I could look at veal again. (Ever had boiled breaded veal patties with green gravy)?
There are a lot of standard veal recipes but no doubt you’ve tried them by now. Just think pork and chicken, and toss in an extra squeeze of lemon.
Well the veal marinated in coconut milk, chilli and ginger worked okay - I put it in the oven for 2 hours at 150 degrees Celcius to cook. Turned out yummy.
Think I will approach it as if it were chicken as they are somewhat similar in appearance.
I agree Turbo Dog eat enough veal and you never want to see the stuff again.
