Crock Pottery: Ground Beef

I love using my crock pot, and I’m always on the lookout for new recipes.

I just threw together an old recipe for Crock Pot cheeseburgers, and thought it would be nice to hear some other crock pot recipes using ground beef.

If there’s an interest, I might start a new Crock Pot thread every week or so with a different “Secret Ingredient.”

So here’s your assignment: Give me your best crock pot recipes that include ground beef.

Hamburger soup.

I’ll have to dig out the recipe for you, as I don’t have it handy, but it tastes to me akin to a poor man’s beef barley (it has hamburger, barley, beef broth, tomatoes, onions, carrots, bay leaves… let me find the recipe for you).

Could the OP share that cheeseburger recipe with the rest of us?

Here it is. It ain’t classy, but it’s goo-ood!
Crock Pot Cheeseburger
Brown 2 pounds ground beef and drain off grease

Mix in crock pot:
2 cloves of minced garlic
1 ½ cups of minced onion
1 tsp black pepper
1 tsp parsley flakes
6 TBS milk
½ cup of water
18 oz of Velveeta, cubed
Browned beef

Cook on high for 1 hour and low for 5 hours, stirring occasionally
Serve on hamburger buns

Here we are!

Hamburger Soup
1 1/2 lb lean ground beef
1 medium onion chopped fine
1 28oz can diced tomatoes
2 cups water
3 cans beef consomme soup
4 carrots, chopped fine
1 bay leaf
3 stalks celery, chopped fine
1/2 tsp thyme
1/2 cup pearl barley
parsley, salt & pepper to taste

Brown meat and drain off fat. Add onion and sauté about 3 minutes.

Combine all ingredients in large 5 quart pot or crockpot and simmer for a minimum 2 hours. If you are using a crock pot you can cook it all day.

We like eating this with fresh bread (love the bread machine) or rolls, and sometimes we put a little shredded cheese on top but you don’t need to, it’s so good as is. Perfect cold day food.

I just put this in another slow cooker thread, but:

Make a meatloaf.

Ball some aluminum foil.

Put the meatloaf on the foil.

Cook on low.

It works really well. I usually put it in before I go to work, so it cooks over 8 hours. I don’t think 8 hours is necessary, but it’s fine.

Just made this one recently: Albondigas Soup

Make small meatballs according to your favorite recipe and brown.
Place in crockpot.
Add 6-8 cups beef broth or stock, chopped garlic, chopped onion, 1-2 small cans diced green chiles, 1 can diced tomatoes, sliced baby carrots, a splash or two of Worcestershire sauce, & chili powder or ground chipotle to taste.
Cook on low for 6-8 hours. Add a handful of rice or fideo noodles, cook another half-hour until tender. The starch ingredients will expand even after cooking, so use them sparingly. What you think is not enough will probably be just right.

Serve with plain (not flavored) tortilla chips, either on the side or crumbled into the soup like crackers.

Happy, that sounds fantastic! I’ve got a block of Velveeta in my fridge and a wife who doesn’t really care for the stuff–this sounds like the perfect use for it!
