Do you have a source for ways of freezing this stuff (which I can bury small towns in at the moment) We freeze corn, snow peas, and beans, but haven’t tried them. We do mix up zucchini, eggplant and tomato, and freeze that.

Scroll down, they have a table with methods of freezing many vegetables. For zucchini, you cut them into small cubes, blanch them (if you want them to store longer) and freeze them.

Here in Vegas, there are at least 3 Farmer’s Market’s advertised but I’ve always been wary- like it may just be hyped normal grocery store produce (or worse, rejected produce) so I haven’t gone to one yet. Anyone in Vegas been there?
