That loos like the exact business model of Boardwalk Fries. They were a BIG part of the treat when going to the mall as a kid, I remember them being exceptional. It seems they’re down to only a few states, too bad. I don’t remember a single menu item there except the fries.
I think they might have been dusted with an MSG enhancement.

Does In-N-Out count since they only serve burgers and fries? I’m not really sure that’s a niche in general, but I guess the limited menu is their niche.
for some reason even tho I live in the biggest Latino populated areas outside of Mexico (La County CA) real birria is almost impossible to come by its made with beef mostly
Yeah, birria seems to be having a “moment” in CA taquerias propelled by the minor viral sensation of the quesabirria (which are indeed delicious). However since goat is harder to source and most Americans wince at it, beef has become the new standard. The only places I’ve seen serving the goat versions have been the handful of OG places that have been doing birria stews for decades.
What’s an “OG” place?
OG = “Original Gangster” and is a bit of American gang slang that has migrated into more general discourse and Webster’s as: someone or something that is an original or originator and especially one that is highly respected or regarded. Basically in this case referring to the relatively small number of old, established taquerias that have been serving more original versions of birria since long before the new craze hit.
Yeah, here in Chicago, there are a number of goat places. My local grocery will often even have goat heads in the meat counter during holidays, from what I’ve noticed, but there’s a few meat packing places where they sell all sorts of goat and assorted parts, down to the testicles. (Like, seriously, you go to Park Packing and there’s a bucket of goat balls on the floor.)
Quesabirria, the newish trend, though, I’ve only seen made from beef. While goat is traditional in its birthplace Jalisco, I do believe other states will use other meats like beef, mutton, lamb, even pork.
I was there this past Tuesday, and confirm that’s all they have.
I see goat offered regularly in Puerto Rican and Jamaican restaurants, and sometimes Indian

Oh, wow! I can’t even find a great croque monsieur in the Cleveland area.
I believe it used to be a food truck. They serve the sandwiches with yucca fries. So good.
The website no longer works. But looking at the photos those are not even remotely considered croche monsieurs.
If a restaurant opened up which only served this, I would go pretty often.
