Glass and marble boards are more for presentation and serving than for cutting on. They’ll ruin a good knife faster than sandpaper.
They’re not, but this probably wouldn’t be a valid argument even if they were. Not everything that is harmful is severely harmful, all the time, every time.
I’d like to see how the plastic boards treated with Microban compare to wood boards. Supposedly it’s some compound incorporated in the plastic itself that inhibits bacterial growth.
