I’m seeing a lot of green bean casseroles. Not only have I never had that at Thanksgiving, I’ve never had it EVER. Nor is ham a staple. We might have it occassionally for Easter or Christmas, but not Thanksgiving.

My Thanksgiving meal (as prepared by my mother):

Turkey
Roast duck
Roast beef (what can I say…we love meat)
Mac and cheese (baked, not stove top)
Dressing/stuffing with gravy
Sweet potato souffle
Yeast rolls
Mashed potatoes (not one of my favs)
Collard greens (cooked with turkey hocks)
Cranberry sauce (for tradition’s sake…I don’t usually eat it)
Baked beans (cooked with bacon…yummy)
Apple pie

When my sister and I had our first away-from-home Thanksgiving, we decided to cook for ourselves. We felt like we had to have three elements for the meal to qualify as a “good” Thanksgiving: collard greens, macaroni and cheese, and sweet potato souffle. Funny that these are the items that are missing from most of ya’lls posts.

I have made a list of the items I found where recipes would be wonderful. It’s a long list, but there’s still time to decide among the choices if we get the recipes soon :wink:

Mincemeat pies with hard sauce.

Harvest pie
Mushroom and sage bread dressing
Whole Mushrooms roasted in a creamy parmesan sauce with breadcrumbs on top

Sour Cream Crescent Rolls
cranberry sauce - all recipes
5 cup salad (marshmallows, mandarin oranges, pineapple, sour cream, shredded coconut)
Frozen cranberry loaf (cranberries, coolwhip, pineapple)
Creamed corn - all recipes
Deviled eggs - all recipes
broccoli cheese casserole
hot casserole with kidney beans, northern beans, lima beans and a sweetish sauce
Mushroom, wild rice, and onion stuffing, sometimes with additions of dried apricots and/or slivered almonds
Sweet potato casserole with ginger, pineapple, and orange juice
mushrooms stuffed with a mixture of spinach, sauteed onions, garlic, sour cream, and Parmesan cheese
goat chese baked in tomato sauce to spread on toasted garlic baguettes

I have spent Thanksgiving dinner the past 3 years in the most traditional way possible, eating with the Indians.

We have the buffet at the casino.

Roast turkey – in a Reynolds bag.
Stuffing – bread, celery, onion, seasoning, sausage.
More stuffing. We usually get a 20 lb turkey, and make enough stuffing for a 95 lb turkey.
Gravy.
Mashed potatoes, usually from a box (ever since the time we substituted instant for fresh, and no one noticed).
Green bean casserole, and/or stuffed zucchini
Occasionally, sweet potatoes. I can’t stand 'em, myself.
Can-shaped cranberry sauce.
Brown ‘n’ serve rolls.

Pumpkin pie
Some other pie, usually apple.
Steamed carrot pudding - a tradition from the English side of the family.

The Pea Salad recipe is very simple, and very good. Start with a bag of frozen peas. Bring to a boil with water. When done, drain and stir in crumbled bacon, chopped green onions and mayonaisse. Absolutely delish, and the proportions can be varied to taste.

Monstro, I usually do greens with ham hocks or some other pork product. How does using turkey hocks change the flavor? This is definitely getting added to this year’s repast.

I don’t really taste a difference. I don’t know why my mother uses turkey, because she puts bacon in everything else!

This thread has made me extremely hungry, by the way.
