There’s also at least one all-Vulcan crew in the TNG/DS9 era. The USS T’Kumbra. Sisko and the DS9 command persons played them in a baseball game (minus Odo (who was the ump), plus Jake, IIRC). The T’Kumbra crew won handily.
There are probably a number of single-race ships in the fleet. Andorians, Vulcans, and a few others, especially seem to be the kinds to end up doing that.
