Dinner suggestions: What should we eat this week?

Oh oh, I forgot about my quick and easy “risotto” recipe:

You need: a large frying pan.

Get some pre-spiced chicken wings (or regular chicken wings, or chop up some chicken fillet). Fry them quickly in butter untill brown. Remove from the pan.

Add some more butter or oil to the pan. Add a chopped onion and some garlic and fry until it’s soft. Add about 100 grams of risotto rice per person. Stir the rice through the oil and add about 300 ml per person of chicken / herb / fish stock. I sometimes add a bit of cumin.

Bring to the boil and let boil on a low heat for about 20 - 30 minutes (untill most of the moisture is soaked up / evaporated). Optionally add some chopped parsley and / or some pre-boiled sea-food.

The chicken wings make it messy to eat, but it’s very very yummy, especially with some chilled white wine :slight_smile:

Adding some frozen peas / carrot a few minutes before the cooking’s done is good too.
