Potato salad is a common staple in these parts when it comes to covered-dish get-togethers. As much as I like potatoes, mayo, and eggs, I’ve never been particularly fond of potato salad–although that never stopped me from slopping a few dollops any time I wenth back for more stuff.
And it suddenly dawned on my why I don’t really like the taste that much: One of the common ingredients is relish (is this sorta what they call “pickle” across the pond?). Relish is typically sweet, and as much as I like “sweet potatoes,” I don’t care much for “sweet” white potatoes. There are any number of other things that I would add personally instead of relish–but that’s just my own bias.
So. . . .
Do you add relish to your potato salad? If not, what is your recipe? Personally, I’d substitue some chopped onions, pesto, and pine nuts.
I have never, ever used pickle relish in making a potato salad. I don’t particularly have anything against it, but I just never buy it. I’ll add diced pickles, typically kosher dills.
I don’t mind a tiny bit of chopped sweet pickle or relish, but it’s got to be tiny. I’d always have chopped onions, black pepper and a dash of hot sauce, and top off with hard-boiled eggs and tons of paprika. (I’m assuming the potatoes and mayonnaise go without saying.)
I *hate hate hate * pickle relish in in anything, potato salad, tuna salad, deviled eggs. I don’t mind pickles on the side by why do people put pickle in these salads??
I use boiled reds, a little mayo, onion, wee bit 'o mustard, pepper, salt to taste, maybe a sliced radish or two. The key is to add the dressing on when the potatoes are still warm so it sticks.
A version I came across last summer calls for chopped dill pickle. It’s really good, doesn’t add a sweetness you don’t want.
There’s also a little chopped celery, for additional crunch. Garlic instead of onions. And the fat content is about 2 parts mayo to one part olive oil, mixed with lemon juice, which makes it less cloying than a lot of mayo-based potato salads.
Oh, and there’s paprika in it. Which makes it pink.
Red potatoes, onion, celery, garlic, chopped HB eggs, chopped dill pickle, a bit of olive oil and vinegar, some mayo, salt & pepper, garnish with paprika. Sometimes I add dill weed. No relish, thanks.
