“Bastard Tacos” would probably be a great name for a food truck.
For a couple of weeks after Thanksgiving, my family would eat turkey tacos and turkey burritos.
Smooth peanut butter and raisins rolled in a tortilla dorsn’t suck either.
I shredded the last of the turkey and cooked it with salsa. Then I rolled it up in corn tortillas and put them in a bag in the freezer. ‘Turquitos’ made for an easy meal.
A friend swears by PB&J wrapped in a flour tortilla.
My carb bomb of choice is mac-n-cheese (with some hot sauce) wrapped up in a tortilla.
I wouldn’t say with NO pretense to being Tex-Mex, but it’s not uncommon at our house for any sort of roasted, grilled or smoked meat to go into a tortilla along with some combination of chopped onions and cilantro, salsa, sour cream, guacamole, shredded cheese, lettuce and tomatoes.
Barbecue is surprisingly awesome with this treatment; it’s almost worth smoking a brisket for the tacos alone. The same goes for roast chicken(if I can prevent my wife from making soup out of it), post-Xmas/Thanksgiving turkey, leftover steak, roast pork, etc…
A little off-topic, but was anybody else thrown off a little by the Title Case in the thread title? My brain kept trying to read various parts of it as a proper noun/brand name. 
Cook up some good-quality big fish sticks (yes, I’m talking breaded). Toss 'em in a bowl. Glop in tartar sauce and add pepper and Old Bay to taste. Stir until creamy (I am not kidding). Spoon into warm tortillas. Fish tacos - my fish tacos.
