Does anyone have a good recipe for jam-jam cookies?

You know the ones I mean: soft buttery cookies, with raspberry jam in-between two of the cookies?

My mother used to make them for us growing up, but I’ve not been able to find her recipe and want to make some for the Cub.

We make these for holiday dinners.

Those look good, but not quite what I’m looking for. They’re jam sandwiches.

Any plain sugar cookie or shortbread cookie recipe should fill the bill. Make them any size you wish. I vote for shortbread.

Never heard of them. Sounds like something English, they (used to, anyway) like jam and jelly.

Linzer cookies- that’s the name. My sister’s MIL, who was from Hungary, made a delicious version. I made a batch for a friend’s wedding shower in a heart shape. They were good, too. I’ll look up that recipe if the OP is interested.

The recipe calls for molasses to be included, which I don’t remember my mother using, but I can’t rule it out.

As far as I can tell from the pictures, the Linzer cookies don’t get soft. That’s not the case with the ones I’m thinking of: the cookies are hard when they come out of the oven, but once they’re made into sandwiches, the jam softens them up.

Likely - they were my grandmother’s recipe, and her family came from Scotland.

You’re right- Linzer cookies stay crisp. The ones you posted look very good!
