Cheese, mac, chicken and spinach.
I also have bacon. Can’t decide if I want to add that or not.
I ask because these are the current ingredients I have in my kitchen.

Sounds good to me… I’d add the bacon. Bacon makes everything better. What kind of cheese?
I have seen “Florentine” (Firenza) versions of the same layered Lasagna style… hell yea, it ud be tasty.
I’ve got Velveeta and smoked cheddar. And your right, bacon does make everything better! ![]()
Sounds real good. If your using macaroni I’d make sure the spinach was chopped pretty well - if you’re going to mix it all together nothing should be larger than the pasta IMHO.
Well, here’s the only problem I see, if you want to do Pollo alla Firenza Lasgna. I would slow simmer the chicken thighs alla cCacciotore with wine, tomatoes, mushrooms, peppers, onions, and garlic… fresh herbs…shred to layer, then I would also have to buy the ricotta, lasagna noodles, or make them simply homemade. Gotta do a combo of white cheese (rigot) mixed with the spinach, Parmagiano, and egg yolk, even if you are going to do the Velveeta and smoked cheddar. So that’s maybe a five to ten dollar overrun of your recipe.
Yes it sounds good, though it’s a pity you don’t have a can of chili to add to it. That would make it hodgepodge deluxe!
It sounds great, and yes, add the bacon.
Do you have any parmesan, perhaps in a green can? I would add that as well and make a bitchin’ mac & cheese bake.
My opinion would be to leave out the Velveeta. Save it for chip dip if you can. Mac and cheese (with whatever else) is so much better when the cheese is not really a sauce. (Plus, I don’t really like Velveeta.)
Obviously, other people’s tastes differ.
