I know wine. But what I know is that I don’t know everything. This can’t be done, can it? There isn’t an alloy that you can dip into a glass of wine and instantly it mellows and ages…is there?
If you can replicate a year’s ageing within an hour, you’re talking about speeding up a series of complex chemical reactions by a factor of about 9000 with a single catalyst. I’m calling bullshit on this one.
Wine is probably only rivaled by audio equipment in the number of pseudo scientific gimmick products available and the gullability of the people who buy them. Dan of Dan’s Data has done a piece on Clef du Vin.
They do have laboratory data showing that it makes the wine more succeptible to oxygenation. Whether or not this is a good thing is disputed.
They got slapped by the ASA for several false or misleading claims in their advertising.
