I want to try a sandwich like this sometime, but my husband insists on chicken fried steak if we have cube steak in the house. I don’t bother with an egg dip, I just dredge the steaks in well-seasoned flour. I cut up an onion and some mushrooms, fry them in butter, let them rest in a warm oven while I make the steaks. Mashed potatoes and gravy are also mandatory.
I made chicken fried steak on the 4th to celebrate Independence Day - it’s one of those quintessentially Americana type foods. However, I wasn’t 100% happy with it - my breading was a little mushy and soggy instead of crispy. Help - can anyone tell me where I went wrong?
I used an egg/milk wash, along with seasoned flour. Dip steak in egg, shake off, dip in seasoned flour, shake off, back into the egg, back into the flour. Let sit for a minute or so on a plate. Heated oil in a pan, fried up (I got a nice sizzle when I laid the steak in the pan, so I think the oil was hot enough). I didn’t use much oil - maybe 3-4 tablespoons? Not the 1/2" or so recommended above - is this where I went wrong? Not enough oil? Not hot enough, maybe? My steak did taste a bit of oil, so I think it absorbed some, maybe my oil wasn’t hot enough.
I need to perfect this. (Although my arteries probably won’t love me, my husband will.) Tips?

I usually put the steaks in a warm oven while I make the gravy. This means that I have to pull them out of the frying pan a bit before they’re done, but it does mean that I can concentrate on making the gravy properly, and it seems to crisp up the coating.
And CFS is one of the reasons why that old saying “The way to a man’s heart is through his stomach” is so often repeated. My husband adores CFS, and he prefers mine to anything he can get at most restaurants.
Anybody have any good cube steak recipes that don’t involve flour or dairy?
You can bread with anything acceptable to your diet. If it’s a gluten problem, try buckwheat flour mixed with corn flour. As for dairy, it’s unnecessary. If a roux made without wheat flour doesn’t work well, Just use water and corn starch to make the gravy base, and smear a little oil on the meat to get the breading to stick. With cube steak, the breading could be pressed into the meat without any other binder.
