Eenie-meanie, CHILI-BEANIE, the spirits are about to speak

I posted another thread specifically for helping me sort out my chili colorado. (Thanks for the suggestions there, BTW.) This thread is for posting about your best chili recipe. Purists will say that chili should not have beans, and/or it should not have tomatoes. I’ve had very tasty chili made with each or both. So heresy be damned, let’s hear your award-winning, or at least family-pleasing, recipes… even it id does contain taboo ingredients!

Chili

5 lbs Bullwinkle, chopped into rough 1/2" cubes*
Dried ancho, Anaheim, Guajillo peppers - a lot
Cumin - no, more than that
A buttload of garlic, diced
Beer - another buttload
3 or 4 onions, chopped
Crystal Sauce - about half a small bottle
salt and pepper
1 1/2 jars Gebhardt’s chili powder

Brown the meat in batches using oil or preferably bacon grease or lard. Moose is very lean, so the more fat you brown it in, the better. Add to 20 quart stockpot. Add onions. Stir until onions become soft. Add beer, hot sauce and spices. Tear/cut dried chiles into 1/2" pieces, discarding seeds and stems (just like cleaning your dope in the good old days!) Add chili pieces to pot. Crack another beer and simmer over low heat for a couple of hours, or until the moose is tender. Eat standing over the stove using Fritos or tortilla chips as scoops.

    • Mixed moose meat. We BBQ’d the ribs and turned most of the rest into sausage or stew meat. The chili was what was left over after all the trimming had been done. Mostly stew meat but with some rib meat tossed in for good measure.

If chili isn’t supposed to have beans, why do they call them chili beans?

That said, chili needs to be beanless when it’s on a Tommy’s chili burger. Also, when it’s on a chili dog.

It’s been too long for me to remember what Tommy’s chili tastes like, but I can verify that the All Recipes recipe in that thread (with cumin added) is very good on a chili burger (toasted bun, burger, American cheese, the chili, sliced tomato, another toasted bun). I think it’s even better as a ‘Wienerschnitzel’ chili cheese dog.
