i used to have a little gadget that poked a hole in the fat end of the egg shell…this allowed water to get inside the shell where the membrane forms a sort of bubble…as the egg cooked the water separated the membrane from the shell but didn’t touch the egg inside the membrane…the eggs were then very easy to peel…i’ve lost the little gadget over the years, but i still keep a small nail in my kitchen drawer to poke holes in the bottom of eggs that i hard boil…works like a charm!..just gotta be careful not to pierce the membrane…

The way I get the shell of a hard boiled egg off can hardly be called peeling. What I do, is put the egg on a plate and roll is with the palm of my hand with pressure, so the shell cracks and rolls off. I have been doing it since I was little, and it works every time. Despite the fact that there are somtimes little peices of shell stuck to the egg, but a stream of water can fix that.
