Egg Preferences: Small, Medium, Large, XLarge or Brown

I prefer the large size. Whether it’s brown or white, I don’t care. Also, I can find no difference in taste between the more expensive cage free eggs and the regular supermarket brand. I can tell the difference between a true free-range farm egg and either of the above two. It’s huge, and I’ll pay whatever premium to get really fresh farmers eggs. My understanding is that it’s the diet, with battery and cage free chickens being fed a vegetarian grain-based diet, while true free-range chickens eat worms and bugs and other stuff along the way, making the eggs more eggy. Whatever it is, true free range eggs taste a lot different than regular or cage free eggs.

White are most common.

I normally pony up for the pasteurized eggs so that when I make cakes or cookies I don’t worry about the safety of eating the raw dough or batter on the beaters.

The exception is at Easter, when I buy whatever white ones are available. Not only are they cheaper, they aren’t pre-marked with a “P” on them. Given a choice, I’ll buy the ones in a fiberboard carton rather than styrofoam or plastic because it will biodegrade.

Personally, I usually buy large or extra-large, but that doesn’t cover the possibilities by a long shot. My mom recently got some chickens (organic, semi-free-range), and they’re laying eggs about three sizes larger than XL. One of them actually weighed in at four ounces.

Yeah, I think brown people taste a little “heartier” than white people, but you are right that nutritionally they are the same. :wink:

The ones that grow up into chickens…I don’t care for eggs/have a very mild allergy that bothers my system if I eat them more than once per week, so I just don’t eat them.
