I’m listening to Howard Stern and he’s raving about a meal his girlfriend cooked for him last night. A caller called in and told him it was a dish called “Engagement Chicken” from Glamour magazine - a dish so good you are guaranteed to get a proposal out of the man you serve it to. It was lemon chicken, served with vegetables, and he has totally sold me on this meal! Thing is, Glamour really isn’t on my list of magazines, and I’d rather not buy it just for that. But a quick internet search of engagement chicken brings up nothing but reception menus. Any fans of Glamour out there feel like sharing this recipe with an old unglamourous married cook?
ACK!! If you had asked this just a few hours before you posted, I would’ve had the recipe for you. Here at work, a coworker had that exact recipe for Engagement Chicken (January 2004 issue). Apparently the author knew of three couples that got married a month or so after the woman made the chicken. Hell, even I wanted to make it!
I’m already married and my wife isn’t the best cook, but I’d love to try this recipe myself.

Ok, Got it…
1 whole chicken (approx 3 lbs)
2 medium lemons
fresh lemon juice (1/s cup)
kosher or sea salt
ground black pepper
Place rack on upper third of oven and preheat to 40 degrees. Wash chicken inside and out with cold water, remove giblets, then let the chicken drain, cavity down, in a colander until it reaches room temperature (about 15 min) Pat dry with paper towels. Pour lemon juice all over chicken inside and outside. Season with salt and pepper. Prick the whole lemons three times with a fork and place deep inside the cavity. Place the bird breast side down on the rack in the roasting pan, lower heat to 350 degrees and bake uncoveredfor 15 minutes. Remove from oven and turn it breast side up (use wooden spoons) return it to oven for 35 minutes more. Test for doneness-thermometer in thigh should read 180 degrees or juices should run clear when chicken is poked with a fork. Continue baking if necessary. Let chicken cool for a few minutes before carving. Serve with juices.
Cool, that’s it!. But it has to be served with certain vegetables. Asparagus, or something else. Can’t remember.
SuperLorie, I read it when it first came out and was offended by it, sorta. But then LOTR was almost like Holy Writ to me in those days.
I’ve lightened up a bit since then. I’ve been thinking I need to re-read the book and see if I get it better now.

Anyway…the side dishes that go with the engagement chicken are asparagus and new potatoes.

That recipe sounds pretty simple, but apparently it’s damn tasty chicken.
Fluffy, can you check the recipe? I think one or two things are missing, such as the initial cook time and the first termperature.
