My sister is in Vegas for a summer job cataloging bees*. She and her cow-orkers are planning to go a different ethnic restaurant every Friday, but they aren’t familiar with the area, so I was hoping I could get some recommendations for them. My sister is a confirmed foodie and will probably try just about anything.

I don’t know about Vegas specifically, but around most of Nevada they have a lot good Basque restaraunts, which is an ethnicity most people forget about when looking for restaurants.
Las Vegas is no New York, but there is a pretty good selection of ethnic restaurants…
She could try www.lasvegas.com and do some searching on restaurants. Also on that site is the link to the local newspaper, the Las Vegas Journal. They have a “best of” edition once a year that includes ethnic restaurants…it might still be linked to their website.
She should also try the International Food Market (I think that is the name) on the corner of Tropicana and Decatur. It is a huge warehouse that has foods from all over the world, at decent prices - of course, she would have to take it home and cook it herself.
If your sister likes buffets she would definitely like the Spice Buffet at the Aladdin. My SO and I were there last week and it is an excellent buffet, especially if you like ethnic food.
There were two kebab houses in Vegas, one Persian one and one Indian/Pakistani. The Persian one was so-so, the Indian/Pakistani one was sublime. I don’t remember the name exactly, but it had the work “Kebab” in it.
