We use raw eggs in smoothies all the time; it creates awesome texture. But we have fresh eggs from our little flock of hens.
I suggest washing eggs right before using them. Chicken feces carries salmonella. But with eggs from a known source, you’re mostly safe.
Still not a good idea to eat raw pork. Cite.
I spoke with the guy in the meat department of our local grocery store. He actually remembers his parents/grandparents talking about mett. He gave me some leads on where I can buy uber-fresh pork, so hopefully by the end of the year I will give it a try.
This. the problem with eggs usually has to do with salmonella on the shell. Crack the shell and the insides get contaminated. Wash 'em before you crack the shell.
Yes, but wash them right before you use them, there is a coating that helps keep eggs fresh, dont wash that off until ready for use.

There have been some recent reports of serious health issues (but not Trichinosis) in raw. undercooked pork recently. Do not eat raw undercooked pork except from a source that is certified not to use antibiotics.
OMG, Mett and its encased companion, Mettwurst…my mouth is watering. Yes, it’s excellent. As Mettwurst it might get grilled, but as Mett on bread…so awesome.

Last night we held our annual Xmas eve dinner at our house for my family. Each year is themed. This year was a German dinner, since my brother and his wife are just back from a few years living in Germany.
We made sauerbraten, sweet and sour purple cabbage, potato pancakes, applesauce, etc.
The appetizer was Mett. I found an “Ethnic Butcher” who prepared it. I drove an hour each way yesterday, and brought it home in a cooler on ice. I had some, my gf had a bite, my bro and his wife had some. Not bad!
