I don’t think the characters have changed as drastically as you might think. Its more like your looking at different sides of the characters because the situation demands a certain change outside the role you usually see them play. Like Moe, we all knew there was something dark about him but since he was always the bartender and nothing more, we never found out what it was about him. Now that he has more lines and more episodes ( 3 now right?) we can see his other layers.
