The other day in Costco, I saw a bag of frozen “tilapia loins.”
The mind boggles. Do tilapia have loins? What do they do with the rest of the fish?
Apparently they do. It’s the top part of the fish, along the spine. I guess if you cut it right, it’s thicker than the fillet.
Cod have loins too.
