Expired Corn Bread Mix has been in freezer

I’m making some great beans and needed something to go with. I’m out of bread and even crackers. Found a package of cornbread mix in my freezer with a “best before” date of sometime in 2006. It does have shortening and baking powder in it-- just add fresh egg and milk. It’s been in my freezer this whole time. When I opened it, it smelled okay, meaning there was no rancid oil smell.

It’s in the oven right now… what do y’all think? Will it be edible?

YMMV but especially with frozen, packaged stuffs like that I tend to think of the Best Bye date more as a ‘suggestion’ than a ‘mandate’ (oop, no pun intended).

It will be perfectly edible. It may not rise as well as a fresh mix.

I’d taste the mix first in case it has picked up the stale freezer taste or the fats have gotten a bit rancid.

Too late. :slight_smile: I did smell it before baking and there was no freezer smell or rancid oil smell. It actually tastes okay. It’s been so long since I tasted cornbread made with fresh mix (prolly since ~2006…) that I can’t compare… but it’s not bad.
