So why is that funny?

It’s funny because he can eat it, while she, for some reason, can’t (probably the ‘counting calories’ thing suggested above), so it’s revenge for her eating a sub sandwich in front of him during Passover, when he, an observant jew, couldn’t eat leavened bread. Which is inherently amusing, but also funny because he waited months on end for the opportunity, and took it. Revenge is a dish best served cold, covered in powdered sugar and filled with jelly.

Pitas generally have leavening. Not kosher for Passover. If they were, you’d see a hell of a lot fewer attempts to make sandwiches with matzoh.
