Extra Extra Sharp Cheddar... crystals?

It looks like Beechwood ships, but I’m not seeing any 7 year old cheddar with the crunchy bits on their website. You probably need to present a valid Wisconsin drivers license to purchase the stuff.

Truth to tell, they just distribute it in their shop. The oldest they make there is a 3 year old, which I must admit is sharper than your average 3 year old cheddar. But not as sharp as the 7 year old, and not crunchy.

As a native midwesterner I certainly thank the Wisconsinites that have given me a place to go for good cheese. I have some 8 yo cheddar on its way and a cranberry meunster. We have our own specialties on the Oregon coast. If anybody is in need of hippies or bums, prices are quite reasonable. In fact, I’ll pay for shipping myself. I don’t know what else we are known for. Heroin maybe? I really don’t know what sustains this economy.

Please pardon my cheesegnorance, but how do they age these things for so long? The cheddar in my fridge gets all moldy after a few weeks.

Properly produced, sealed, and stored in a cool dark place, cheeses may age for decades!

An old friend/mentor who grew up in Wisconsin in the 1920’s reminisced that back before the US entered WWII, Wisconsin was sending surplus cheese to England to help them out. They were cleaning out old cheese storage sheds and sending them 20 year old cheddar!

Tho I must admit, there is controversy in the cheese producing circles. Some claim that cheddar really doesn’t change after 6 years of aging.

I tend to disagree. I’ve had 12 year old cheddar that was far, far sharper than mere 6 or 7 year old stuff, produced by the same manufacturer.

I ordered from Kris’s Cheeses. I had trouble navigating some of the other sites. I’m hoping for some good cheese crystals as this is not something I have experienced.

WOW… thanks for all the replies!! I love sharp cheese! in fact just finished eating some slivers, but im trying to dig out the crunchy bits… they taste bitter… and well… CHEESE SHOULDN’T CRUNCH!!

Unfortunately im all out of my aged goats milk Gouda… man was that good… I could sit there with a sharp knife and shave off paper thin pieces till it was gone!

Now I want a burger made out of 21 day aged steak topped with a nice 5-7 year old cheddar. Call it the “mummy burger”…mmmmmm…

Sugar Bush Farm has some seven year plus cheddar on special for a tad over ten bucks a pound if you order a five pound block.

I was pleased to try their cheese after reading recommendations on another cheese thread here last year.
