Fake Ham

Any ideas on how to make a marinade to make pressed tofu taste like ham?

The one store nearby that sold vegetarian ham flavored bouillon closed so I have been trying to make ham flavored tofu using maple syrup, cloves, and tamari sauce but is there a better mix of seasoning for a ham flavor?

I made a tofu bologna once using coriander, ginger, fennel and molasses but I didn’t write down the blend I used and now I can’t replicate it. Any ideas for bologna or hot dog flavor?

A tiny bit of Liquid Smoke would probably help.

I’ll stress this point. When I say “tiny,” I mean tiny. Even one drop might be too much, so dilute one drop with water, and gradually add to taste.

It works for beans.

Thanks. Didn’t find Liquid Smoke so going to try Smoked Paprika and/or Lapsang souchong tea.

Perhaps, use collard greens - they have an uncanny pork-like flavor & smell when well cooked.

It should be near the BBQ sauces, probably on the top shelf.

Leave it in a warm, damp location for about a week.

My lapsang souchong tea tofu is marinating. I’ll grill it tonight. I used some excess broth (the tea, brown sugar, tamari, some red pepper flakes) to re-constitute dehydrated “Soy Curls” (much better than TVP) and the results were awesome but more like barbeque pulled-pork than the ham flavor I’m after. Thanks for tip on Liquid Smoke - I’ll check it out ASAP.

Surprisingly few tofu-flavored hams are for sale. Those pork aficionados don’t know what they’re missing.

  1. Take a large ham, place in a pan of cold water and bring to boil.

  2. After boiling for 30 minutes, remove outer layer of skin, score fat and brush with honey.

  3. Bake for 30 minutes in a high oven.

  4. Remove half the meat; set aside the remaining half

  5. Blend the meat together with oil to form a paste, with salt and pepper to taste

  6. Baste onto tofu and leave to marinate overnight.

  7. Dump in trash, eat remaining half of ham.

The tea was a bust on the tofu. Too mild.

I might try Bacon Salt. It’s vegetarian and Kosher.
