Dear Becky,
I was going through my mother’s 1946 Boston Cooking School Cookbook, and found a column named The Epicure with the recipe for The Williams Inn Banana Bread tucked into the book.
Sadly, a portion of the recipe was missing. I believe it is the amount for sugar.
Do you have the recipe for this bread? Do you need for me to give you more of the recipe?
I would love to give this to my niece as a gift.
Thank you,
Libearyn
libearyn I replied in email but don’t see it showing?? Here’s The Williams Inn recipe in case you can’t see it all:
1/2 cup shortening
1 cup sugar
2 beaten eggs
3 ripe bananas, mashed
2 cups flour
1 tsp salt
1 tsp soda (mixed with 3 TBP cold water)
1 tsp vanilla
1/2 cup nutmeats
Cream shortening and sugar until very light. Add beaten eggs and mashed bananas. Sift flour and salt together and add to first mixture. Add soda, vanilla and nutmeats. Bake 1 hour in moderately slow oven (325 degrees). Makes 1 9x5 loaf.
Happy holidays!
