I’ve always been partial to SNL’s Uncle Roy (Buck Henry).
How about Hoppity Hooper’s Uncle Waldo? 
No love for “Uncle Bernie” (Mac). He took his sister’s three children in when she went to drug rehab and gave them a good life. And the relationships were very realistic.
I miss that show. I think it got jerked around a bit and the quality dipped a bit at the end, but that show was so entertaining. Bernie Mac was a great comedic actor.
How about Mike Brady, uncle to “Cousin Oliver”?
Uncle Mel (Phil Leeds), from Everybody Loves Raymond: “I’m not gay!”
If you are referring to Joey from Full House, he was not an uncle, but Jesse and Danny were.

P.S. To me, Robert from Everybody Loves Raymond is who makes that show worth watching and of course, Raymond’s kids are who make him an uncle.
