This was a recipe my mother got in the 70s. Bake a yellow cake. While it’s cooling, make vanilla or butterscotch pudding (the cook kind, not the instant kind); add in cream cheese. Pour over the cake. Pour crushed pineapple over that. Cover with whipped cream and nuts.

That’s the same cake! I mis-remembered it.

Does anybody else know a magazine called Reminisce? It had a feature where folks could ask for recipes of a given dish. My mother asked for pineapple upside down cake baked in a cast iron skillet. She figured she’d get a few responses and would send a postcard thanking those that replied.

She got so many responses the mail carrier asked what was going on! At Christmas she gave him a gift.
Mom stopped counting at around 1000 responses. After they stopped coming in so fast responses would still trickle in as people saw old copies of the magazine in places like medical offices. Over ten years later, after she had passed, another response showed up. I did write to that lady, sending her a Christmas card and explaining what had happened, and how Mom would have been tickled to get one so far on.

They’re all over the place in Pennsylvania, but I can’t find them in Virginia. So whenever I make my way up there, I’m sure to get myself a few boxes. They remind me of summers spent with my grandparents.
