I’d like to know how to pronounce the name of the famous, pungent and excellent cheese Epoisses.
I have a good general grasp of french pronounciation, but I’m unsure whether this should be pronounced like “epoisse”, or whether the final ‘s’ adds another syllable.

That’s wrong. It’s not a /z/ sound, it’s an /s/ sound. And if the “AH” indicates a back a, that’s wrong too.
Correct pronunciation is /epwas/ where the a is a front open vowel as in “pat”.
Edited to clarify: what I mean is, it’s a wrong French pronunciation. If the suggested pronunciation relates to English usage (like the English pronunciation of “lingerie”), that’s another matter.
I stlll think if you imagine yourself as Bugs Bunny, and Elmer Fudd as your professor, and you jauntily walk up to him at the end of the semester and ask "“AHHHH, what’s my grade, Doc?” and he tells you in his distinctive fashion “A+,” that’s almost letter-perfect how “epoisses” is pronounced.
Well, I guess that depends on how you pronounce “pat” in your dialect. But (and I am not a native speaker, so I’m open to correction) the front open vowel in “époisses” is the same as that in the French word “pattes”. Which is, in turn, the same as my pronunciation of the English word “pat”.
In my dialect, the second vowel in “époisses” would be more similar to the one in “pâtes”. But I mostly agree with your transcription, if I understand it correctly.
