In the '90s I liked the fried whole fish at a Chinese restaurant in Garden Grove. I made it at home, but for the life of me I can’t remember how to make the sauce. The fish is easy: Make a few slices on each side, sprinkle a little salt, and stick it in the oil. How 'bout some help with the sauce?
Non-Chinese sauces (e.g., South American) also appreciated.
When do something similar (though I dust my fish with cornflour first) I just use a nice sweet chili or plum sauce and liberally brush it over
The way they served it at the restaurant was just the fish (no detectable coating) with a sweet-ish sauce and another sauce, and sliced fresh serrano peppers. I don’t remember the other sauce. I had a fried whole fish from a Cuban restaurant once. I don’t remember if they gave me a sauce.
When I made it at home, I mixed soy sauce with… hoy sin sauce? I don’t remember.
