Leftover (forgot to cook) from Christmas: a huge bag of frozen mixed vegetables (you know, carrots, peas, corn, a few lima beans, a few green beans). I asked Mr. Sali what I should do with them and he said throw them out, duh. I hate to do that, I’ll probably eat them eventually bit by bit, put some in soup, etc. But is there anything I can put on them, mix them with, some overlooked good recipe to make, to use a lot up at once? They’re taking up valuable freezer space.
You could put them in a crock pot with some meat and make stew.
Make a big batch of your favorite rice pilaf recipe, and stir a generous quantity of the frozen veg into it as it’s coming to a simmer.
Mix with browned hamburger, add some spices, pour into a casserole dish and top with mashed potatoes. Bake until golden.
frozen mixed veg is good for pot pie. Which is basically a stew in a crust, so, this suggestion is virtually the same as above.
The freezer broke down at work and I ended up with two catering bags of frozen veg. I made korma. Froze it in batches and now I have a veg dish to go with curry and rice. And we eat that a lot. Twenty minutes to microwave rice and heat the curries while packing lunches for the next day in between rowing and water polo training. You get the picture.
Frozen vegetables were the bane of my childhood, so my first inclination is to agree with your husband.
There are tolerable for uses for them in things like soups and stews, where you’re not tasting the vegetables by themselves and you don’t expect a nice al dente texture. I’m not sure I’d want that mix of vegetables in very many applications… in fact, the only thing that comes to mind is minestrone. Get some canned tomatoes, a little Italian sausage, either potatoes or noodles and you have dinner.
Chinese style stir fried rice. Chicken or shrimp.
quick version: take a couple of cups of your leftover Christmas turkey, the leftover gravy, and as much of the veggies as you can stand. Combine them in a pre-made deep dish pie shell. Top with another crust (or a biscuit crumb topping). Bake. Serve. (And in our house, rinse the picked-out mixed veggies into the disposer…but oh well, we tried…)

Imma going with a shepherd’s pie thing, topped with mashed potatoes and cheddar cheese. That’s a good combination, with or without the meat.
You can also mix them with ground beef, season it a little, put in a casserole dish, top it with corn bread mixture (I use Jiffy) and bake. Top with a little butter. It’s quick, pretty tasty, nothing fancy but it will get rid of the veggies.
I hear some people just put them on a plate and eat them. Strange, I know.

When my son was a hungry teenager, a quick fix he could make himself was sticky rice. Just a box of rice-a-roni with a can of chopped chicken and a cup of frozen veg thrown in. Made according to the rice stuff directions, just toss in the drained chicken and veg when it’s time to simmer. One pot, minimal effort and cleanup, it’s certainly not high-falutin but it helped use up that kind of veg and stave off his imminent collapse until dinnertime.
Mr Sali is wise. You should throw them out, as they are evil.
Whatever your do, do NOT out them in fried rice.
