Will German gas pumps will click off automaticaaly? Had a bad experience once in unfamiliar territory back in the States leaving me a little leary here.

You mean stop when the tank is full? Yes, they should. Never encountered one that didn’t.
I remember pumping gas in the 50’s and pumps would shut off automatically even then. Sometimes they would fail so we had to be watchful. Today’s pumps are more sensitive and tend to shut off early.
Never encountered one that did not. In my experience with some cars they shut of way too early; sometimes I had to gently tease the last five litres or so in.
BTW one pitfall: if your car needs high-octane gasoline (Super), do not by mistake use the high-quality diesel that some stations call Super Diesel.
