In the book, the movie producer’s name is Woltz. In the movie, he seems to be called Woltz, but when Tom Hagen initially approaches him, it seems that he calls himself “Wolsk.” Does anybody else hear it this way?

I’m going from memory and voting for “Woltz” and I do believe there’s a shot of the exterior of the studios where there’s a sign saying something like “Woltz Pictures” or “Woltz International” or something on that order. (The studios look a bit like Paramount. Go figure.)
I should have mentioned that the extra features on The Godfather Collection 5-disc DVD set include reference to the fact that the “second unit” did the filming of those exteriors in Hollywood when Hagen pays that visit. You can tell (once you know to look for it) that that’s not Duvall in those shots where “he” is walking down the alley to the studio entrance with briefcase in hand, and in the exteriors at Woltz’s house. The long shots are of two separate actors with voiceovers. Once you get the interiors (shot elsewhere) you see Duvall and John Marley (psst – there’s a neat clue in this link).
The scenes with Duvall and Marley were shot at a mansion on Long Island. The exteriors with the doubles were shot in the Los Angeles area.
WOLSK is the way a Romanian Jew would pronounce the name WOLTZ.
