I’m trying to find a good CD with the music (no vocals0 of G&S: HMS PINAFORE, The Mikado, Pirates of Penzace, etc. Again, just the music, please!
I found a CD containing the overtures from all the G&S operettas on Amazon. I’m not sure if it’s any good to you, but in general, the overtures are taken from the melodies of the actual songs in the show. I don’t have the CD, so I can’t comment on the quality.
There exists a 1951 ballet consisting of music from G&S called “Pineapple Poll”. However, I’ve never actually listened to it.

I was going to suggest something like that. If you’re looking for the actual songs without vocals, that’s a pretty tall order. Fandom generally consists of people who love the words. And melodies are often not doubled in the instruments unless the chorus is singing.

The movie soundtrack for Topsy-Turvy has a good sampling of G&S’s work, focusing on “The Mikado.”
Nitpick: if all you want is the music, then it’s Sullivan, not Gilbert and Sullivan.
I would go with his greatest hits CD, it has all the classic singles- “Clair”, “Get Down”, “Alone Again”, etc.
