Pita bread is yummy as is any of the other middle eastern bread’s. You don’t have to make a sandwich out of them but can pack them as a supplement to whatever else you are eating.

Humus, espeically “Chumus Solo” brand with pita, veggies, or anything to dip.
Any kind of casserole that can be reheated is sweet.
But… I feel your pain. There just never seems to be much that works as a lunch, other than a sandwhich. The best solution is to steal from other cultures.
The Japanese version of a sandwhich, using sushi rice and seaweed, is pretty sweet. Indeed, most Japanese lunchbox items are pretty darn good even if cold.
I tend to eat the frozen stuff for lunch. The Lean Cuisine ones are surprisingly good. Stouffer’s is even better, but tends to be heavy on calories. I thought I’d quit eating them when I started working at home, but I’ve found that it works best to throw something in the microwave and keep working rather than take the time to go make something in the kitchen. If I do that, I’m down there for an hour perfecting the sauce or something.
Other ideas: Leftovers! When you make dinner, make extra. Freeze or refrigerate in meal-size portions. Eat for lunch.
I like salads for lunch, too, but I hate making them. What about cold cereal? Yum, cereal. Breakfast is good anytime. Frozen waffles rock.
Hey, Myque, I seem to recall seeing something in the frozen food section called a “Diberito” (after the cartoon character, Dilbert.) It looks like one of those frozen burritos, but it claims to be vegetarian and good for you. It’s just what you’re asking for–a vegetarian frozen entree. I’ve never tried one, though (and it was a while ago when I saw it–I hope they still make them!) Anyway, you should keep an eye out for them.

Go to a natural foods store. There ought to be a whole freezer full of vegetarian frozen meals. You can also get a huge variety of vegetarian canned soup and just-add-water meals and the like. Keep an eye out for sales on Tasty-Bites Indian meals (they come in foil bags packed in boxes). They are the best things ever.
