Grapefruits; bitter? sweet?

Personally, I hate grapefruit juice, it’s way too bitter in my opinion. I know it’s sweetened and everything, but it still makes me pucker up like I’ve been sucking on a lemon.

Yet I adore fresh grapefruit. Cut up and sectioned, chilled with about a teaspoon of white sugar sprinkled on top. It’s such a wonderful way to start the day, I love that grapefruit juice, don’t find it too bitter at all. And a teaspoon of sugar hardly seem enough to make a difference.

When I cut the grapefruit up the night before. I must always wash my hands afterwards because they are very sticky. As though it were a sweet fruit. Much stickier than say oranges.

So which is it?

Is grapefruit bitter or sweet? If it’s bitter why are my hands so sticky? If it’s sweet why does it make me pucker up even when sweeteners have been added?

Most of the bitter flavor comes from the pulp surrounding the sections. When you section it, you separate the sweet from the bitter, so to speak.

When squeezing a grapefruit for juice, some of the bitter oils come out in the process. In addition, the bitterness becomes stronger over time.
