The opening lines I know by heart are all total gimmes, so I’ll let them go for now. If I think of a non-obvious one, I’ll post it later.

An obscure book, but one which I highly recommend:

RobuSensei, that’s Bridge of Birds, by Barry Hughart - I had to read that in college, I’d know it anywhere.
