Darned hamsters. I was sure I put full name and address down!(snort, giggle). Anyway, here are the recipes.
Caviar Pie
8 finely mashed hard-boiled eggs
6 tablespoons melted butter(3 ounces or 85 grams)
8 ounces sour cream(225 grams)
1 tablespoon finely chopped onion(or to taste)
1 3.5 or 4 ounce jar black caviar*(99 to 113 grams)
1 baked 9 inch pie shell
Blend together the eggs and the melted butter. Press into the pie shell. Sprinkle the onion over the top, and spread the sour cream over all. Place in freezer for one hour, or until sour cream is firm. Remove from freezer and spread the caviar thinly over the pie top. You can now serve, but I prefer to let it thaw somewhat. *I used grocery store caviar, it’s expensive enough as it is!
Spinch-feta pastries
Pastry:
8 ounces soft cream cheese(227 grams)
8 ounces soft salted butter(227 grams)
2 cups flour(10 ounces, or 283 grams)
With a fork combine cream cheese and softened butter. Cut in the flour. Work with hands until dough holds together. Wrap in plastic or waxed paper and chill dough. Roll it out 1/8 inch thich with floured rolling pin on a well floured surface, cut in rounds with 1-1/2 to 2 inch cutter(or size desired).
Filling:
1 onion, finely chopped(7-1/2 ounces, or 213 grams)
3 tablespoons olive oil
1 package frozen chopped spinach, thawed and well drained*
1 teaspoon salt
4 ounces feta cheese, crumbled(113 grams)
4 ounces cottage cheese, drained(113 grams)
1 egg, beaten
*I use the standard 10 ounce package(283 grams) spinach, and usually add a little more, to make up for moisture weight loss when drained. I also usually squeeze it a little to remove excess moisture.
Saute onion in olive oil until softened; add spinach and stir. Cook over low heat until mix is hot. Mix cheese together and stir in egg. Add to spinach onion mixture and blend well.
Place a little spinach filling on each round and fold over, having moistened the edges so it will hole together. Flute edge with a fork and prick center. Place pastries on a cooky sheet and bake in a 425 degree Farenheit(220 degree Celsius) oven for 15 minutes, or until golden brown. Serve warm.
Brown Sugar Drops, with black walnuts
It’s actually Betty Crocker’s recipe, but here goes
1 cup shortening(8 ounces, or 226 grams)
2 cups brown sugar, packed(14-3/4 ounces, or 418 grams)
2 eggs
1/2 cups buttermilk or water(118 milliliters)(I use buttermilk)
3-1/2 cups flour(17-1/2 ounces, or 496 grams)
1 teaspoon baking soda
1 teaspoon salt
Mix shortening, sugar and eggs thoroughly. Stir in buttermilk. Stir together flour, soda and salt, and blend into sugar mixture, adding one cup coarsely chopped black walnuts. Chill dough for at least one hour.
Heat oven to 400 degrees Farenheit(205 Celsius). Drop rounded spoonfuls of dough onto lightly greased baking sheet, seperating them a little as dough will spread some. Bake 8 to 10 minutes or until almost no imprint remains when touched lightly.
