How do you hard boil an egg so that the shell comes off easily?
Old eggs.

Here is what works for me more often than not:
Put eggs in cold water. Bring to boil. Remove from heat, cover, wait 20 minutes (these are the high-altitude directions BTW).
Pluck egg out of hot water with a spoon. Rinse in cold water approximately 15 seconds, so the egg is cool enough to hold. It will heat up again while you perform the shell removal.
So you start with a cold egg, crack the shell–by now it is a warm egg. Peel the shell off–at this point it’s hot enough that you don’t want to hold it, but now the shell is off, and you can use cold water to rinse it again. Then go on to the next egg.
The temperature really seems to be key here. I have no idea how fresh these eggs are. They were not laid this morning.
Or while they are still on the warm side, make them egg cubes or bento fun shapes! =)
